This is so simple to make and so delicious. The milkshake is flavoured throughout with toasted marshmallows, then finished off with a couple of extra ones for good measure. It's the taste of summer/bbq/campfires all rolled up in to one delicious drink/dessert.
Ingredients - makes 2-3 milkshakes (depending on the size of your glasses)
3 bags of Fresh Vanilla Marshmallows
1/4 pint of milk (semi or full fat)
3 scoops of vanilla ice cream (about a third of a tub)
2 tablespoons of soured cream
softly whipped double cream to finish
Line a grill pan with foil and rub lightly with vegetable oil.
Put aside 3 marshmallows and spread the rest out on the grill tray.
Put your grill on to high and put the marshmallows under the grill. You want to toast them until they are on the edge of burning as this is what really gives the milkshake its 'oomph' of toasted marshmallow flavour.
One the mallows are nicely toasted, put the tray in to the freezer until the mallows have completely cooled down.
Now scrape them off the foil in to a blender, add the milk and whizz until the mixture is nicely blended. Add the ice cream and sour cream and whizz again. Check the thickness - this makes quite a thick (spoonable) milkshake - if you prefer yours a little thinner, add some more milk and whizz again.
Now pour your toasted marshmallow mixture in to your glass, and top with a dollop of the lightly whipped double cream and a couple of extra toasted marshmallows. Toasted marshmallow heaven!
Variations - I also tried this with a small punnet of strawberries, macerated with a tablespoon of sugar and a squeeze of lemon juice. It was delicious ) and very pretty to look at - see below) but for me it overpowered the toasted marshmallow flavour which is what it's all about.
