A Chocolate Fridge Cake is one of my favourite recipes to make when I want a lazy, delicious dessert – no baking required! Marshmallows are often a staple in fridge cakes, so we’ve adapted the classic fridge cake and incorporated our own delicious raspberry marshmallows into a new recipe, which beautifully compliment the sweetness of the glace cherries. Result? The tray below vanished in a matter of hours.
This makes for a great dinnertime treat which everyone will enjoy! Feel free to swap out the glace cherries for pecans, walnuts etc. if you prefer more of a crunch.
Ingredients (Makes 12 Squares)
250g digestive biscuits
200g milk chocolate
100g dark chocolate
100g unsalted butter
150g golden syrup
1 ½ bags of raspberry marshmallows, cut into halves (who knows what might happen to the leftovers…)
100g glace cherries
Line a 20cm (8in) shallow, square tin with cling film, with a little extra hanging off the side. If you haven’t got cling film but happen to have baking parchment or greaseproof paper that’s fine to use instead.
Put your digestives into a sandwich bag and seal it. Bash the bag with a rolling pin until all of the biscuits are in pieces.
Put your chocolate, butter and golden syrup into a heatproof bowl suspended over a pan of simmering water, stirring occasionally until everything has melted and combined.
Remove the bowl from the heat and allow to cool for 10 minutes, then stir in your broken biscuits‚ cherries and marshmallows.
Spoon the mixture into the tin. Level the surface as best you can with a spoon, spatula, or anything else which works!
Leave to cool, then put your tray in the fridge to set for 1-2 hours.
Turn out the fridge cake and peel off the cling film. Cut into 12 squares and indulge!
